Asparagus and Poached Eggs with Hollandaise Sauce


Asparagus and Hollandaise sauce are  lovers in  food creation – they were made for one another. Nothing can go wrong with these two. Combine them with some lightly poached eggs and you have a healthy and quick meal for breakfast or lunch.


  • Eggs
  • Asparagus

  1. Cook asparagus as you wish to – steamed, fried or baked
  2. Poached eggs:
    i.      Add the water and white vinegar to a 6 ounce custard cup
    ii.     Break egg into cup, pierce egg yolk with toothpick, and cover dish loosely
    with plastic wrap

    may need to experiment with cooking times based on the wattage of your
    microwave and taste preference)
    iv.    Immediately remove egg from hot water with a slotted spoon as it will
    continue to cook
    v.      Serve with salt and pepper to taste

Place the cooked asparagus a plate. Once the eggs are done, carefully place them over the asparagus. Gently piece the yolk and let it run over the asparagus. Lather it with as much hollandaise sauce as you want. Season with additional salt and pepper. Enjoy!
